Hey long time no blog! Well I'm back and thought I'd start by sharing the reason I stopped blogging. So, not long after my last post back in February, I decided to lose some weight. I joined Slimming World and stopped baking. I mean, my willpower is rubbish so if I baked something, I couldn't stop myself from eating it which is not compatible with losing weight! Although I missed baking *so much*, the only baking I did was birthday cakes and for cake sales at work.

For a while I didn't even think about blogging and the months just rolled by. But I recently noticed that even though I haven't posted anything new, I've continued to get new Facebook and Bloglovin' followers... so someone must like my recipes!

So I got to thinking about baking and blogging again and what I wanted to do with my blog. After a lot of thinking and indecision, I came to the conclusion that I want this to be a baking blog. That's all. Just baking. It's what I'm good at and what I enjoy and it seems that's what my lovely readers want too!

I wanted a fresh start and My Darlings and Me just didn't seem to suit the direction of my blog anymore. 'My Little Kitchen' was a name I thought of a long time ago {because I have a really small kitchen!} so here it is! I've spent the last couple of weeks re-designing the blog {hope you like it!} and baking like crazy so I've got lots of new recipes to share and a list as long as my arm of goodies I want to bake. By the way, I'm still doing Slimming World and I've lost 24lbs so far. So to keep temptation away, my plan is to take lots of baked goodies into work... I'm going to be very popular in my office!

I baked these cookies yesterday which were a huge hit with the hubby and kids, in fact they never made it into work as they disappeared within hours of baking them. They're really easy to make and are truly one of the tastiest cookies I've ever made. They remind me a bit of HobNobs... only better!

Chocolate Oaty Cookies

Makes 18
Prep time 15 minutes
Baking time 15 minutes

125g self raising flour
125g light brown soft sugar
125g porridge oats
½ tsp bicarbonate of soda
125g butter
1tbsp golden syrup
150g chocolate chips/chunks

Preheat oven to 180°C/350°F/Gas Mark 4. Line two baking sheets with grease-proof paper or parchment.

Put the butter and syrup in a pan and warm through gently until melted. Mix the flour, sugar, oats and bicarbonate of soda in a large bowl. Pour the melted butter and syrup into the dry mixture, give it a good mix with a wooden spoon and then add the chunks of chocolate.

Roll the mixture roughly into balls, no bigger than golf balls. Put them on the baking sheets 
spaced evenly apart and flatten them down a bit.

Pop in the oven for 15 minutes {they might feel really soft but they will firm up when cooled down}. Leave to cool for a few minutes, then transfer to a wire rack to cool completely.
