Chocolate Orange Brownies

My work colleagues are a lucky bunch you know. Not only do they get to sample my baked goodies on a regular basis but they get the opportunity to be my guinea pigs and test out new recipes. So recently when I decided to embark on the quest for the perfect chocolate orange brownie, I was inundated with eager taste testers.

When I started to research possible recipes, I found that there were three main methods of adding the orange flavour to the brownies: 1. Use Terry's chocolate orange as the chocolate in the recipe 2. Add orange marmalade to the recipe or 3. Add grated orange zest and juice to the recipe

So this is where my taste testers came in. Over the space of a couple of weeks I made the brownies using my go-to brownie recipe but added a different orangy ingredient to each batch.

First off I made the brownies but substituted the dark chocolate that I usually use for Terry's chocolate orange. They were nice but the chocolate wasn't intense enough and they lacked that rich chocolate flavour that brownies should have. I also had to bake them for much longer than I normally would as the middle took ages to set.

Next I made them with orange marmalade. Again they were quite nice but the verdict was that they weren't orangy enough.

Lastly I made them with the addition of the zest and juice of one orange. It seems I saved the best till last! Perfection. Everyone in the office agreed that they were the perfect combination of rich intense chocolate with a good zesty kick of orange. Now everyone keeps asking me when I'm making some more!

Chocolate Orange Brownies

Makes 12
Preparation time 20 minutes
Baking time 30 minutes

200g dark chocolate
200g unsalted butter
250g caster sugar
3 large eggs
Finely grated zest and juice of one orange
120g plain flour
One whole Terry's Chocolate Orange (175g) chopped into chunks

Preheat oven to 180C {350F} Gas mark 4. Line a 25 x 20cm baking tin with baking paper.

Melt the butter and chocolate together in a heatproof bowl over a simmering pan of water or in a microwave on 50% power in 30 second bursts. Give it a really good mix and set aside to cool slightly.
Beat the eggs and sugar in a large bowl with a hand held electric mixer until really thick and creamy. Add the chocolate mixture, plus the orange zest and juice and beat again. Sift in the flour and fold in gently, until the flour is just combined. Pour into the prepared tin. Sprinkle the chocolate orange chunks over the brownie mixture in the tin.

Pop in the oven for 30 minutes. When ready it should be set and crispy on top but still gooey in the middle. Gently wobble the tin and the middle of the brownie should slightly wobble when it's ready.

Leave to cool for at least 2 hours before you even attempt to cut it. If you cut it up too soon, the brownie will leak all over the place. Cut into squares and give the squidgy middle slices to those you love the most.
