No-Bake Nutella Cheesecake

I've had a few days off work over the Easter holidays and wanted to make the most of my time with the darlings. So we've had a few days out and shopping trips {for holiday clothes!} so I've not had very much time for baking.

This cheesecake has been on my 'must make' list for a while so I quickly  threw it together on Sunday morning before we left for our day out. It's embarrassingly easy to make with just five ingredients. All you need is a little patience to wait for it to set. Oh and it tastes gorgeous too!

No Bake Nutella Cheesecake

Preparation time 15 minutes
Chilling time 4 hours

250g digestive biscuits
75g butter
400g jar Nutella
500g cream cheese, full fat
60g icing sugar

Break up the digestive biscuits and whizz them in a food processor until they turn to fine crumbs. Alternatively, you could put the biscuits in a strong plastic bag, fasten tightly and bash with a rolling pin until you get fine crumbs. Tip into a bowl.

Melt the butter in the microwave and add to the biscuit crumbs. Add one tablespoon of Nutella to the bowl and mix until it starts to come together.

Tip the mixture into a loose bottomed flan dish or cake tin and press into the base with your fingers or the back of a spoon. Put in the fridge to chill.

Beat the cream cheese with the icing sugar until smooth, add the Nutella and beat until fully combined.

Spoon the Nutella mixture over the biscuit base and smooth the surface. Place back in the fridge to chill for at least 4 hours or overnight.

Be patient, it's worth the wait!
