Reasons To Be Cheerful 04.10.12

Hey everyone. I've been a very busy bee today and I'm feeling shattered so I'm going to dive straight in with my reasons to be cheerful this week.

Here we go...
  • It's my birthday next week. Not exactly a reason to be cheerful as I'm not happy about being only three years away from forty! But I'm really happy that I'll be getting a few new baking books that I've wanted for a while. I'm also looking forward to a nice meal out somewhere with my family {parents, sister's family and us} I just have to decide where we'll go. I'm going to bake myself a beautiful big chocolate birthday cake too!
  • Yesterday evening one of my oldest and closest friends came round for a coffee, cake and chat. We find it so difficult nowadays to find the time to get together for a catch up. We always meet up during the school holidays and we usually go to her house for lunch which the Darlings love as they enjoy playing with her 7 & 8 year old daughters. Hubby is on the late shift this week so it was really nice to have some company and have a really good girly gossip.
  • The reason I've been so busy today is I've just finished making this carrot cake. I must admit that it's my proudest baking achievement so far. Don't forget that until April this year, I hadn't baked since I did GSCE Home Economics many many years ago! So making this carrot cake and having it turn out so well makes me very happy. Plus a few seconds after I took the photo, I ate the whole slice and it was delicious!

  3. Carrot cake is my absolute favourite and this one looks delicious! Well done for dusting off the baking books! It's my birthday too in a few weeks and I'm the other side of 40....it's not that bad, honest!
