Mega Chocolatey Triple Chocolate Chip Cookies

Most families have a bit of a routine don't they? Now Oliver has settled into nursery, we've settled into a weekday routine. I go to work in the morning, get home from work and make lunch for the Darlings and I {hubby goes to work when I get home if he's on the late shift}. Then Lydia goes for her afternoon nap which is usually a couple of hours. So during this time Oliver usually plays with his cars or train set and I either do some jobs, a bit of blogging or some baking. Oliver sometimes wanders into the kitchen to help me or I'll do it on my own {much less mess!}

These cookies are the perfect recipe for a spot of afternoon baking {or Sunday morning baking if you like}.

These are the chocolatiest cookies you will ever find! I've called them triple chocolate because they contain, melted chocolate, cocoa powder AND chocolate chips. I don't think you can pack in much more chocolate than that.

Mega Chocolatey Triple Chocolate Chip Cookies

Preparation time 15 minutes
Cooking time 18-20 minutes
Makes 16

125g dark chocolate minimum 70% cocoa solids
125g butter softened
75g light brown sugar
50g caster sugar
1 teaspoon vanilla extract

1 medium eggs cold from the fridge
150g plain flour
30g cocoa powder
1 teaspoon bicarbonate of soda
½ teaspoon salt
350g  dark chocolate chips {or dark chocolate chopped up into small pieces} 

Preheat the oven to 170°C {gas mark 3}. Melt the 125g dark chocolate either in the microwave or in a heatproof dish over a pan of simmering water.

One word of warning. Just be careful when you put them on the baking sheet. You really need to put them quite far apart as they spread. A lot. I used an ice cream scoop to measure the mixture into equal sized mounds and they ended up as massive cookies. They were about 12cm {4.5"} across. The second batch I made must have been placed too close together as they just merged into one big cookie on the baking sheet. I make these mistakes so you don't have to! You can thank me later.
