Chocolate Fingers and Smarties Birthday Cake

OK I know you're probably bored of seeing photos of my birthday cake! But I was so proud of it that I posted pics of it all over the internet... Facebook, Twitter, Instagram and my blog of course. And I know you've all been waiting for the recipe so here it is.

As I've only been baking seriously for a few months, I love having the chance to make birthday cakes for anyone and everyone. Even myself. My cake was decided on weeks ago but I originally planned to make it with KitKats and topped with Maltesers and Galaxy Counters. I changed my mind at the last minute as I thought using Smarties and chocolate fingers would appeal to Oliver and Lydia more. I wasn't bothered as long as it was made from chocolate cake and filled with rich, creamy chocolate ganache! 

After tea, we did  the whole 'lighting candles/singing Happy Birthday/blowing out candles' thing. The little ones loved it and were dying to pick the Smarties and chocolate fingers off and start scoffing them. I think it's the first birthday cake I've had since I was a kid and it was perfect!

Chocolate Fingers and Smarties Birthday Cake 

Preparation time 20 minutes
Baking time 30-35 minutes
Serves 16

For the cake 
250g plain flour
200g caster sugar
1 tsp baking powder
½ tsp bicarbonate of soda
40g cocoa powder
175g unsalted butter (soft)
2 large eggs
2 tsp vanilla extract
150ml sour cream

For the ganache
200g dark chocolate {broken into small pieces}
100g milk chocolate {broken into small pieces}
300ml double cream

To decorate
Cadbury's chocolate fingers {I used 2 & 1/2 packets}

Preheat the oven to 180C {350F} gas mark 4. Grease and line two 20cm sandwich tins with removable bases.

Put the butter and sugar into a large mixing bowl. Beat with a hand held electric mixer until it looks light and fluffy. Now whisk together the cocoa, sour cream, vanilla and eggs and add this into your bowl of sugar/butter mixture. Whisk until it's fully combined and smooth. Next add the flour, baking powder and bicarb of soda until you have a well combined and creamy mixture. Don't overmix though.

Divide the mixture equally into the prepared tins and level with a spatula. Pop in the oven for 35 minutes. I started checking mine after 25 minutes, at which point a swapped them around on the shelves in the oven. They will be ready when a skewer or toothpick comes out clean, which should be about 30 - 35 minutes.

Leave to cool in their tins for 10 minutes before turning out onto a wire rack to cool completely. Don't worry about any cracks as they will be covered by the ganache later.

To make the ganache. Gently heat the cream in a saucepan until it starts to bubble, remove from the heat, then add the chocolate and stir like crazy until the mixture is completely melted and there are no chocolate lumps left. Leave to cool for about 2 hours until the mixture has thickened {you can pop in the fridge but the ganache may lose its glossiness}.

Place one of the cakes onto a plate or cake board. Then spoon about 1/3 of the ganache onto the cake and spread evenly. Place the other cake carefully on top and spead 1/3 of the ganache onto the top and smooth with a pallet knife. Then spread the rest of the ganache around the sides of the cake until it is fully covered. You should have enough ganache to give it a good thickish covering.

Lastly, stick the chocolate fingers all the way round the cake and cover the top of the cake with the Smarties. If you wanted a bit of extra wow factor you could sprinkle on a little edible glitter too.

  3. i used smarties an chocolate fingers for Burtons birthday cake back in July and it works really well doesnt it? i want to make the kit kat one next time as Burton will eat those now! I love the sound of your chocolate sponge too mmmm i bet it was deeeeelicious! x

  4. It's a fantastic cake, well done! It's my birthday this week and I have to work, but my husband is off all day looking after the children. I keep telling him that it's the perfect opportunity to make me a birthday cake, perhaps I should point him this way!

    1. I use a 20cm (8") tin Charmaine. I made one today with kit kats round it and maltesers on top... yummy :) Please let me know how it goes x

  8. Hi, I'm making this cake as we speak!! Just wondering - if there is any left does it need to go into the fridge (thinking this because of the cream in the ganache) or is it best in a cake tin/tupperware?

    1. Hi Karen, no need to put it in the fridge, you can keep in an airtight container forup to 2 days. Good luck with the cake, please let me know how it turns out x

  11. Probably the worst sponge cake recipe ever. The oven temp is too high for a sponge and not enough liquid content. Followed the recipe exactly, ended up with a bitter unrisen chocolate biscuit :( it looks lovely but I'll have to go somewhere else for the cake recipe

    1. Oh dear, sorry to hear that Sarah. The recipe is Nigella Lawson's Old Fashioned Chocolate Cake from The Domestic Goddess recipe book which I use for all my chocolate cakes and I have never seen this happen. Hope you have more success on your next go :)
