Apricot and Raisin Flapjacks

So Autumn is now in full swing. The leaves are turning beautiful shades of red, orange and brown and falling from the trees. It's been lovely explaining to Oliver about the change in seasons. He's been really interested this year and asked loads of questions about the weather getting colder, the evenings darker and the colours of the trees. I try my best to explain everything in a way he can understand and he seems happy with my answers!


Autumn may not be my favourite season {I'm a spring girl!} but I love autumn food! I've been making lots of comfort foods like fish pie and macaroni cheese. I'm making plans for baking some yummy sweet treats for Halloween and Christmas too. I always think of Flapjacks as being an autumn treat. I was going to put the blackberries that we picked into these but they didn't last long enough to make it!

Apricot and Raisin Flapjacks

Preparation time 10 minutes
Baking time 25 minutes
Makes 16

150g butter, cut into cubes
75g soft brown sugar
120g golden syrup
300g porridge oats
75g apricots, chopped
75g raisins
Preheat the oven to 180C {375F} Gas mark 4. Grease a 20cm square baking tin and line with greaseproof paper.

Gently melt the butter, sugar and golden syrup together in a large saucepan, stirring continually. When everything is melted, take off the heat and stir in the porridge oats, apricots and raisins.

Pour into the baking tin and press the mixture down and into all the corners. Pop in the oven for 25 minutes until it turns a golden colour. While it's still hot, cut into 16 squares and then leave to cool in the tray.

Perfect with a cup of tea on a cold autumnal evening!
