Chocolate orange cupcakes

Here's another recipe from my new cupcake recipe book. This was one that I really wanted to try out as I adore chocolate orange. I made these for our team meeting at work and got lots of lovely comments about them. Some were topped with a chocolate orange segment and some with orange Aero balls. Both yummy!



Chocolate Orange Cupcakes
Makes 12
Preparation time 20 minutes
Cooking time 25 minutes

Cupcakes
125g lightly salted butter, softened
125g caster sugar
150g self raising flour
2 eggs
25g cocoa powder
1/2 teaspoon baking powder
finely grated rind of 1 orange

Icing
100g plain chocolate
100g unsalted butter, softened
125g icing suger
2 tablespoons cocoa powder

Preheat oven to 180°C (350°F) Gas mark 4.

Line a 12 section bun tray with paper cases. Put all the lightly salted butter, caster sugar, eggs, flour, cocoa powder, baking powder and orange rind in a bowl and beat with a hand-held electric whisk for about a minute until light and creamy. Divide the cake mixture evenly between the paper cases.

Bake in the oven for 20 minutes or until risen and just firm to the touch. Transfer to a wire rack to cool.

Melt the chocolate {I do it in the microwave with 1 minute spurts} and leave to cool . Beat togehter the unsalted butter, icing sugar and cocoa powder in a bowl until smooth and creamy. Stir in the melted chocolate.

Pipe or swirl the icing over the tops of the cakes and decorate with sprinkles of your choice!

  6. These look yummy! Might wait until Christmas to try them out when I will inevitably have a supply of chocolate oranges to use up...(then again it depends if one falls in the trolley whilst shopping):)
